3. Low Carb Fried Chicken — Keto Fried Chicken

Low Carb Fried Chicken
Keto Fried Chicken

Now, here is a low carb fried chicken recipe that I’m sure Colonel Sanders would say is “finger lickin’ good”! His secret recipe of 7 herbs and spices has been revealed already, but just wait until you learn about the three secrets in this one.

Are you tired of all the messy grease splatters and clean up that goes along with frying chicken? Well, don’t fret, I gotcha covered. The amazing thing about this one is… it’s not fried at all. It’s baked in the oven, but tastes just like real fried chicken.

The first secret that makes this Keto chicken dinner so tasty, low carb and healthier, is the breading. There are two options you can use, depending on your likes or dislikes. The first option is to use almond flour or almond meal for your breading, but it won’t have that perfect southern fried chicken taste.

The second option is the preferred choice for this recipe, but requires using pork rinds. For various reasons, some of you will have an issue with that. If so, then go with option #1 and it will still be dairy free and gluten free.

Put some pork rinds into your food processor to grind them into a powder. You might prefer to do it manually. This will result in different size pieces and seem more like a traditional crispy fried chicken.

The second secret is sure to give your chicken lots of extra flavor. Instead of doing a simple egg wash dip for your breading, we will coat each piece with a whisked mixture of egg, mayonnaise and Dijon mustard. This mixture is guaranteed to make your breading stick.

The third secret is key to achieving that perfect southern fried chicken texture. Simply place a wire cooling rack over a baking pan so that all sides of the chicken are exposed to the heat evenly. Be sure to space your pieces apart to allow for this.

The 40 minutes of baking time at 400 degrees Fahrenheit combined with the prep time will make this low carb fried chicken close to an hour to prepare, but well worth it. Avoid the hassles of frying and enjoy this recipe with less than 1 carb per piece.

Ingredients:

Chicken

Pork rinds or Chicharron

Egg

Mayonnaise

Dijon mustard

Thyme

Sea salt

Pepper

Oregano

Garlic powder

Paprika
